Baby spinach
2 cup
Fresh shiitake mushrooms, stemmed and quartered
1 chopped
Large Onion
2 table spoon
Olive oil
1 teaspoon
Garlic Powder
Fried Spinach

This is one of my favourite African dishes. Not only is this dish healthy… it is TASTY!!

  1. Heat the olive oil in a wok over medium-high heat
  2. Add the mushrooms and onion, and saute until they are about halfway done
  3. Add the spinach
  4. Liberally sprinkle with garlic powder
  5. Fry until the spinach has wilted, about 5 to 7 minutes.
