  1. Preheat oven to 150°C Place oxtail in a large bowl and coat with the flour, mixing well so it is all covered. Heat a large oven proof pot on the stove and Brown the oxtail in Batches. Add all the oxtail back to the pot and add the beer, thyme, bay leaf and soup Cover with a lid and place in oven for approx. 2hrs. Remove from oven and add the mushrooms and stir well. Return the pot to the oven and cook for a further 20mins until the mushrooms are cooked. Remove and serve with rice or mash.
